Adding a little tomato puree gives extra
strength of flavour to this sauce.
Ingredients:
Makes 300ml/ 1/2 pint/ 11/4cups
1 onion, chopped
1 garlic clove, crushed
15ml/1tbsp olive oil
450g/1lb tomatoes, peeled and chopped
10ml/2 tsp tomato puree
5ml/1tsp sugar (optional)
salt and freshly ground
black pepper
Directions and Method:
Cook the onion and garlic in the oil for
about 5minutes until softened but not brown. Add the tomatoes, tomato pure,
sugar (if using imported tomatoes, out of season) and seasoning.
Cover and simmer for 15 - 20 minutes, stirring
occasionally. If the sauce seems a little thin, remove the lid and simmer for a
few more minutes to reduce slightly.
