100g/4 oz potatoes
400g/13 oz French beans
2 green peppers
200g/7oz vegetable marrow
litres/3 pints water
salt and pepper
50g/2 oz vermicelli
3 cloves garlic
1 X 10ml spoon/1dessertspoon olive oil
1/2 X 2.5ml spoon/1/4 teaspoon dried basil
Directions and Method:
- Dice the potatoes and chop the tomatoes, French
beans, onions, green peppers, and marrow. Put the water in a saucepan and heat
to boiling point; add the vegetables, and simmer for 15 - 20 minutes. Add the salt,
pepper and vermicelli and cook for a further 8 -10minutes.
- Meanwhile skin and crush the garlic. Pound it
with the oil and basil. Add a little hot soup to the garlic and basil, and
return the mixture to the saucepan. Stir well and heat through for 2 - 3 minutes.
- Serve with grated Gruyere cheese.
