1 teaspoon vegetable oil, butter or margarine
1 small slice ham, chopped
1 small potato finely chopped
1-2 tablespoons frozen peas or
sweet corn kernels, rinsed
1 egg lightly beaten
2 tablespoons milk
Directions and Method:
- Heat oil, butter or margarine in a small
frying pan over a medium heat add ham, potato and peas or sweet corn and cook,
stirring frequently for 5 - 10 minutes or until potato is tender.
- Place egg and milk in a bowl and whisk to
combine. Pour egg mixture over potato mixture in pan, reduce heat and cook,
without stirring for 3 - 4 minutes or until omelette is just firm.
