Potato Chips Or
Curls
Peel
4medium potatoes. Cut lengthways in 1cm thick
slices, then into 1cm-wide sticks or peel long
potato strips with a vegetable peeler. Cook in a
deep pan of moderately hot oil for 4 - 5minutes for
chips, 2 - 3minutes for curls, or until golden and
crisp. Drain on paper towels. Serve hot.
Golden Roasted
Potatoes

Peel
4medium potatoes. Place in baking dish, brush
liberally with combined 1tablespoon olive oil and
20g melted butter. Bake at moderately hot 2100C/1900C
gas for 20minutes, brush with oil mixture. Bake
further 30minutes or until crisp and golden. Serve
hot.
Creamy Potato

Peel
and chop 4medium potatoes. Cook in a large pan of
boiling water until just tender; drain and mash. Add
20g butter and 2-3tablespoons cream. Season to taste
with salt and pepper. Stir until smooth and creamy.
Sprinkle with chopped fresh herbs. Serve hot.
Duchess
Potatoes

Peel
and chop 4edium potatoes. Cook in a large pan of
boiling water until just tender; drain and mash. Add
3egg yolks, 2tablespoons cream and 2tablespoons
grated parme-san cheese. Mix thoroughly. Pipe
mixture in swirls onto grassed oven trays. Bake in
moderately hot oven 2100C/1900C
gas for 20minutes or until golden brown. Sprinkle
with paprika. Serve hot.
Quick Cheesy
Potato Bake

Peel
and thinly slice 4medium potatoes. Thinly slice
1onion. Layer potato and onion slices in an
ovenproof baking dish. Sprinkle grated cheddar
cheese between each layer. Pour over combined 1/2cup
cream, 3/4cup milk and 1teaspoon mustard powder.
Sprinkle top with extra grated cheese and chopped
chives Bake in moderate oven 1800C
for 40minutes or until cooked. Serve hot.
Herbed New
Potatoes

Wash
12small new potatoes. Cook in a large pan of boiling
water until tender; tip into a colander to drain.
Toss with 60g melted butter and 2teaspoons each of
freshly chopped basil and chives or parsley. Serve
hot.
Potato Salad

Peel
and chop 4medium potatoes into 1.5cm cubes. Cook in
a medium pan of boiling water until just tender;
drain Rinse and drain again; leave to cool. Combine
1/4cup whole egg mayonnaise, 2chopped spring onions,
1chopped stick celery finely chopped. Mix well. Add
potato. Toss through, serve. Add extra chopped herbs
if desired. Cover and refrigerate. Serve cold.
Hasselback
Potatoes

Peel
and halve 4medium potatoes. Place potatoes cut-side
down. Use a sharp knife to make thin slices in
potatoes, taking care not to cut right through.
Place potatoes cut side up in baking dish. Brush
with 1tablespoon olive oil combined with 20g melted
butter. Sprinkle with lemon pepper. Bake in
moderately hot 2100C/1900C
gas oven for 45minutes or until golden and slightly
crisp. Serve immediately.
