I’m using drained and rinsed canned beans for this, but use home-cooked beans if you’d prefer. Finish with a bay leaf, and broth. Season the soup with some salt, and then simmer until the carrots are tender and the soup reduces slightly. When it’s done, remove the bay leaf, stir in a generous amount of cilantro, add a dash more vinegar, and serve. I like keeping the soup brothy, but for a thicker soup, simply blend a quarter of the soup in a blender and add back to the pot. And that’s it! Easy, quick, healthy black bean soup.
