Italian Chicken Recipe: The chicken is finished in a sauce of tomatoes, black olives, garlic, and herbs, with an added zing from some ready-made red pesto, and served on a bed of noodles.
Ingredients:
Serves 4
30ml/ 2 tbsp plain flour
4 chicken portions (legs, breasts or quarters)
30ml/2 tbsp olive oil
1 onion, chopped
2 garlic cloves chopped
1 red pepper seeded and chopped 400g/14 oz can chopped tomatoes
30ml/2 tbsp red pesto sauce
4 sun-dried tomatoes in oil, drained and chopped
150ml/ 1/4pint/2/3 cup
Chicken Stock
5ml/1 tsp dried oregano
8 black olives stoned
salt and freshly ground
black pepper
chopped fresh basil and whole basil leaves to garnish
cooked tagliatelle, to serve.

Directions and Method:

  1. Place the flour and seasoning in a plastic bag. Add the chicken pieces and shake well until coated. Heat the oil in a flameproof casserole, add the chicken brown quickly. Remove using a slotted spoon and set aside.
  2. Lower the heat and add the onion, garlic, and red pepper, and cook for 5 minutes. Stir in the canned chopped tomatoes, red pesto sauce sun-dried tomatoes, stock, and oregano, and bring to the boil.
  3. Return the sautéed chicken portions to the casserole, season lightly, cover and simmer for 30 - 35 minutes or until the chicken is cooked.
  4. Add the olives and simmer for a further 5 minutes. Transfer to a warmed serving dish sprinkle with the chopped basil and garnish with whole basil leaves. Serve hot with tagliatelle.

Ingredients: 8 small lamb's kidneys skinned baled and cored
6 lean bacon rashers quartered
2 boneless chicken breasts ( preferably corn-fed)
cut into 16 chunks
4 X 15 ml tbs olive oil
2 X 15 ml tbs sherry vinegar
1 garlic clove skinned and crushed

few sprigs of fresh thyme

Directions and Method

  1. Soak 8 small wooden skewers in cold water for 30 minutes then thread the kidney halves pieces of bacon and chunks of chicken onto each skewer, alternating the ingredients. Place the kebabs in a shallow dish.
  2. Whisk together the olive oil, vinegar, and garlic with salt and pepper to taste. Pour over the kebabs. Tuck in the thyme sprigs and scatter half of the parsley over. Leave the kebabs to marinate for 20 minutes at room temperature or in the refrigerator for 2 hours, turning once or twice.
  3. Lift the kebabs out of the marinade, allowing the marinade to drain back into the dish. Pat the kebabs dry with absorbent kitchen paper.
  4. Arrange on a grill rack and grill for about 10 minutes turning frequently and basting occasionally with the marinade. Scatter with the remaining parsley and serve hot with the cooking juices drizzled over the top.
    Cook's TIP: These kebabs are also suitable for barbecuing. Baste with the marinade during cooking.
